Potato pancakes have always been a family favorite of ours. As a child, my mother would make them every Fat Tuesday. And with my kids, it was always a pantry favorite, what to eat when we were low on food.I think that everyone should know a few tricks to transform a few potatoes, and staples into a great meal. It’s cheap, it’s easy and everyone loves it.
- 6 russet potatoes, peeled and grated
- 1 onion, grated
- 2 eggs
- 1/4 cup flour
- 1/2 cup oil
Combine potatoes, onion, eggs and flour. Season with salt and pepper.
Don’t worry about the liquid exuding from the potato, this makes the batter. I always stir the batter to make sure that I get some of the liquid in each pancake.
In a large frying pan, heat about 1/2 of the oil over high heat. I can usually make 4 pancakes at a time. This recipe makes about 20-30 pancakes, plenty for 6 people.
