I like to have different waffle recipes for different seasons. Some of my favorites are fall and winter waffles, like pumpkin waffles or buckwheat waffles with a maple pecan cream cheese/butter spread.
But, this morning, I made oatmeal waffles with cinnamon apples.
Oatmeal Waffles with Cinnamon Apples – serves 4
For the waffle batter:
- 1 cup flour
- 1 cup oats
- 1/2 cup maple apple butter (I make my own, but store-bought apple butter would work)
- 1 tsp. baking powder
- 1/2 tsp. baking soda
- 1/2 cup milk (maybe more, maybe less, depending on the thickness of your apple butter)
- 3 eggs
For the cinnamon apples:
- 2 Tbsp. butter
- 2 Tbsp. maple syrup
- 1/2 tsp. cinnamon
- 2 apples, peeled, cored and sliced
For the waffles, combine all ingredients and cook in waffle iron.
Cook the apple slices in the butter, maple syrup and cinnamon over medium heat for about 10 minutes, or until desired softness.
