I’m finishing up the green beans in my garden, and this salad is one of my favorite ways to do so. It’s also very good with beets instead of green beans, either roasted or pickled.
The salad is mixed greens with steamed green beans, hard boiled egg, and homemade croutons, with a goat cheese dressing.
Goat cheese dressing
- 1 Tbsp. shallot or onion, minced
- 3 ounces goat cheese
- 1/4 cup milk, buttermilk or whey, add a Tbsp. at a time until desired consistency is reached
- 2 Tbsp. apple cider vinegar
- 1 Tbsp. olive oil
- 1-2 Tbsp. honey
- 1 Tbsp. fresh thyme, chopped
Add all ingredients except milk to a blender and puree until smooth, add milk 1 Tbsp. at at time until desired consistency is reached. Correct seasonings with salt and pepper.
